INTRODUCTION

ESTUARY OYSTERS GROWS THE WORLD FAMOUS PANACEA PEARL OYSTER IN THE MOST NUTRITIOUS AND PRISTINE WATERS IN THE WORLD

Our Oysters are grown in Apalachee Bay's upper water column in rolling / floating cages. Floating near the top, the oysters are less susceptible to seafloor predators; the continuous water flow brings them more nutrients; the rocking motion knocks off fouling organisms and chips away at their shells, forcing the oysters to grow round and thick rather than long and thin; and the tidal exposures cause them to contract, creating firmness and texture in the meat. This Oyster Ranching method is relatively new, and completely new to North Florida.

Estuary Oysters grows in the pristine Apalachee Bay. Our Oyster Ranching methods are relatively new and yield the best tasting and world-famous Panacea Pearl.
 

RESTORING

Oysters are the original eco-engineers, a keystone species that sets the foundation for other species and acts as a water filtering system for estuaries
 

DELICIOUS

Our methods not only help the environment more, but the oysters grow faster, healthier and firmer. Our pasteurization process will not only render the oysters bacteria free but also give them a longer shelf life.
